Vegan Rainbow Donuts


 

For as long as I can remember I've absolutely loved (and found myself going quite overboard for) holidays, especially since becoming a mom.  There's something so magical and wonderful about getting to create special experiences for our own children, and I'll use just about anything as an excuse to craft a little extra magic for Dallas. Last year as a fun surprise I made these adorable vegan rainbow donuts for St. Patrick's Day breakfast, and with it now just a little over a week away I thought it would be fun to share these tasty little treats with you so that you can craft your own magical morning.

I always thought that making donuts at home would be really complicated, but it's surprisingly quick and easy - the most time consuming part of this recipe is just sorting the Fruity Pebbles making this a fun and easy recipe that anyone can make!


Without further adieu, here's the recipe for my Vegan Rainbow Donuts!  This recipe will make 6 perfect fluffy donuts and takes about 20 minutes from start to magical finish! 

WHAT YOU'LL NEED:
Donut Pan
Piping Bag (or a large ziplock bag will do the trick too!)

DRY INGREDIENTS:
1 C flour
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp ground nutmeg

WET INGREDIENTS:
2/3 C almond milk (or non-dairy milk of your choice)
1/3 C brown sugar
2 TBSP melted vegan butter
1 tsp lemon juice

FOR THE GLAZE + DECORATIONS:
1 C + 2 TBSP powdered sugar
2 TBSP almond milk (or non-dairy milk of your choice)
1/2 tsp vanilla extract
Fruity Pebbles, separated by color
Shredded Coconut


DIRECTIONS
FOR THE DONUTS:
1. Preheat oven to 350° F and lightly grease your donut pan
2. Whisk together dry ingredients in a large bowl
3. In a separate bowl mix together wet ingredients
4. Mix the wet ingredients into the dry ingredients until just combined
5. Transfer the mixture to your piping bag (if using a ziplock bag here add ingredients into the bag and cut one corner off to use as a piping bag)
6. Pipe the mixture into the donut pan, distributing it evenly among the donut wells
7. Pop the pan into the oven and bake for 10-15 minutes until the donuts have become fluffy and the bottoms are browned.  Remove donuts from the pan and place them on a cooling rack so they don't hold too much moisture

FOR THE GLAZE + DECORATIONS:
1. Add the powdered sugar, almond milk, and vanilla extract to a bowl and mix well
2. Gently dip one donut into the glaze so that it covers the front half of the donut and remove it carefully to a plate to decorate.
3. While the glaze is wet, starting from the inside closest to the donut hole, arrange your purple Fruity Pebbles around the top half of the hole. Next, arrange your blue Fruity pebbles around the outside of the purple. Next arrange your green, then yellow, and then finally your red cereal pieces around the outer edge of the previous color so that the top half of your donut is decorated as a rainbow.
4. Cover the bottom half of the donut with coconut shreds and voila! an adorable rainbow masterpiece.
5. Allow the donuts to set for 10-15 minutes for the glaze to set.  (If you have any left over frosting glaze it is wonderful drizzled on the top of pancakes or for dipping fruit!)
